Quick teatime treat: Fruit Tea Bread
Ingredients:
125g (4oz) margarine
275ml (half pint) tea
175g (6oz) mixed dried fruit
125g (4oz) caster sugar
250g (9oz) self-raising flour sifted
1 x 5ml (teaspoon) bicarbonate of soda
1 x 2.5ml (half teaspoon) salt
1 x 2.5ml (half teaspoon) mixed spice
Pre-heat oven 180°C / 35°F / Gas mark no.4
- Grease and bottom line a 1kg (2lb) loaf tin
- Place margarine, tea, sugar and fruit in a saucepan stirring continuously over low heat, bring to boil and simmer for 4 mins. Allow to cool.
- Mix thoroughly with dry ingredients. Place in tin. Bake for 60-75 mins on middle shelf.
- Serve sliced with butter.
Variation: Use 6oz sultanas and grated rind of orange instead of mixed spice.
